A well-known style from Yunnan Province, pu-erh tea is a type made from the local large leaf variety that is sun-dried. It often is aged and undergoes fermentation, as has this lot produced on Jingmai Mountain in 2005; this causes the flavor to gain both complexity and mellowness over time.

From the first infusion, a distinctive camphor note leads to a balanced, broad taste and velvety texture. As the leaves are resteeped, earthy hints of shiitake mushroom, burdock, celery root and ginseng emerge.

Give the leaves an initial quick rinse with boiling water, and brew several times.
