Iced Tea Sorbet
While we all enjoy the pleasure of a pot of hot tea, sometimes we crave something a bit cooler. Many of our teas taste great chilled. You can experiment in the kitchen and make an iced version of Wood Dragon, Spring Mist, or Jade Spring.
Why not go one step further and make some sorbet? Combine 3-4 cups of the brewed tea of your choice with up to 1/2 cup of simple syrup (2 parts sugar to 1 part water, and stir over low heat until the sugar is completely dissolved) and the juice of one lemon. (The tea-to-syrup ratio depends on your own personal taste.) Chill the mixture and run it through your ice cream maker for some deliciously refreshing sorbet. Some of our favorite sorbets have been made with Scarlet Glow and Earl Grey. If you don't have an ice cream maker, freeze the mixture in a shallow baking pan for one hour. Then gently stir the ice crystals with a fork every hour for the next 2-3 hours for an equally tasty granita.
