The birthplace of Wuyi teas, in northern Fujian Province, is now a national park. These rich, highly oxidized oolongs have been made since the 1500s and undergo a labor-intensive process of rolling and slowly drying, requiring careful monitoring throughout. This varietal, whose name means cinnamon, has uniformly twisted thick leaves, which are a rich brown color with a light gray sheen. After rinsing, a deep fragrance of dried fruit- prunes and apricots- is released; pine and spice flavors last through many infusions. The empty cup retains delicious aromas of cherry and honey.
