Mao (hair) jian (point or peak) is a perfect example of delicate Chinese spring greens. In dry appearance the tiny silvery buds are off set by the darker secondary leaves, which turn bright green when steeped. The refreshing vegetal aroma gives way to hints of asparagus and bamboo, and its 'cloudy' appearance is a result of millions of superfine hairs from the tiny spring buds. It takes about 30,000 bud and leaf sets to make up a pound of tea, with each batch gently hand-rolled to twist and twirl the leaves into it's final shape.

Mao Jian is a perfect example of delicate Chinese spring greens. The refreshing vegetal aroma gives way to hints of asparagus and bamboo, and the liqueurs 'cloudiness' is actually millions of superfine hairs from the tiny spring buds. Limited quantity.
Instructions
  •   Start with your favorite spring or filtered water. Preheat the teaware. Use a large strainer basket to allow the leaves to open and release their flavor.
  • Temperature: 180 F               Time: 2-3 minutes
    Amount: 3g / 6 oz serving = 1 teaspoon
    Play with the amount of tea, the water temperature, and steeping time to re-steep - rely on taste, not color. Get to know the tea! Try it gong-fu style - use a lot of leaf and short steeps for multiple infusions.
