Liu An (Melon Seed)

Grown in southern Anhui Province on Qi Shan Mountain, this small tea farm is only accessible by boat. Traditionally two leaves and a bud are picked, allowing slight withering in the basket before sorting to individual leaves at the farm. The single leaves are then fired in a wok and continually agitated with the help of a small broom that gives the leaves its distinct shape, then dried over charcoal in large bamboo baskets. We find the flavor hints toward the sea - almost a combination of Chinese and Japanese characteristics. Only a small quantity was brought back from Sebastian's latest trip to China.

Sebastian took this video about the Liu An Melon Seed production a few years ago when he first visited the farm in Qi Shan Mountain. We hope you find it as fascinating as he did.

Brewing Notes
Start with your favorite spring or filtered water. Heat the water to about 185 degrees - which is when the steam curls out of the kettle. (Or let it cool from a boil).

Use a heaping tablespoon ( 3g ) for a 6oz serving. Please note, for denser teas this is about 1 teaspoon; for larger-leaf teas this could be up to 2 tablespoons.

Steep for 1 1/2 minutes. Remove the leaves when ready -- rely on taste, not color. Use a large enough strainer basket to allow the leaves to open and release their flavor. Get to know the tea by playing with the amount of leaf, the water temperature, and steeping time. Re-steep to make another cup!
