One of China's most famous green teas, Biluochun (Green Snail Spring) is produced only in the early spring from the tiniest new tea leaves. A single ounce contains over 3000 elegantly twisted leaves. This lot was grown in Jiangsu province on a farm where the tea is grown, picked and hand rolled in a wok in the traditional method.

Traveling in China and Taiwan
Suzanne and Sebastian just returned from their Asia trip, with plenty of excess luggage. For two weeks Suzanne was visiting tea gardens and farms in Fuding, Anxi and Chaozhou, and then spent a week in the Nantou region in Taiwan. She brought back several new tea accessories directly from the craftsmen as well as some specialty teas. Over the coming weeks, we will fill you in on where she went and what she learned from her tea journey. At the same time, Sebastian spent time in Hong Kong, Wuyi Mountain and Shanghai. Featured here are some of the treasures they hand carried back with them.
Bi Luo Chun
One of the most famous teas in China is back in stock: 'Green Snail Spring', comprised of over 50,000 tiny leaves for a pound of tea. A true find. We tasted a few different lots of this year's harvest and find this one similar to the tea we got last year. Only 3 lbs are available.


Liu An Gua Pian
Otherwise known as 'melon seed' this tea is grown on the shore of a remote lake in Qi Shan Mountain in Anhui which is only accessible by boat. A few years ago Sebastian filmed the whole process of making this beautiful tea. He could only bring a limited quantity with him.

Anhui Yellow - A Rare Find
This is the fourth year in which we were able to get Anhui Yellow Tea from Mr. Dai's farm. He meticulously crafted this specialty which, due to the three-step drying method, has a distinct vegetal flavor. We like small tea farms, not only because we feel that we have a special relationship with the people, but because their hand crafted teas often taste better.



Brewing Notes
  • Start with your favorite spring or filtered water. Heat the water to about 165 F, which is when the steam curls out of the kettle. (Or let the water cool from a boil.)
  • Use a teaspoon (3g) for a 6oz serving. Please note, for denser teas this is about 1 teaspoon; for larger-leaf teas this could be up to 2 tablespoons.
  • Steep for 2-3 minutes. Remove the leaves when ready -- rely on taste, not color. Use a large enough strainer basket to allow the leaves to open and release their flavor. Get to know the tea by playing with the amount of leaf, the water temperature, and steeping time. Re-steep to make another cup!
